Turmeric Coconut Rice with Afia Falafel

Turmeric Coconut Rice with Afia Falafel

 

1 TBS coconut oil

1/2 cup chopped onion

2 cloves of garlic, rough chopped

1 cup basmati rice

1 tsp turmeric

1/2 tsp comino 

1/4 tsp cayenne

Dash of sea salt

1 cup basmati rice

3/4 cup vegetable broth 

1 cup coconut milk

2 sprigs of fresh thyme

1 cup frozen peas & carrots

Lime & cilantro for garnish 

 

Sauté the onion and garlic in oil. When fragrant add the rice and spices, and continue sautee for 2-4 minutes.

Add broth, coconut milk, and thyme, and bring to a low boil.

Cover and turn the heat to a low simmer. Simmer for 15 minutes or until all the liquid is absorbed.

Add the frozen peas and carrots, and turn off the heat. Let the dish sit covered for 15-20 minutes.

Heat the Afia Falafel per the instructions on the bag.  We recommend heating them up in an oven or toaster oven for a nice crunch on the outside.

When ready to serve, fluff and mix in the peas and carrots.  Top with Afia Falafel.
