Ingredients

  • 1 mango
  • 1 large tomato
  • 1/2 white onion
  • Juice of 2 limes
  • Drizzle of olive oil
  • Sea salt & pepper, to taste
  • 1/2 cup rough chopped cilantro
  • Corn tortillas
  • Chopped Romaine lettuce
  • Afia Falafel, cooked according to package instructions

Instructions

  1. Cook the Falafel: Prepare Afia Falafel according to the package directions until golden and crispy.
  2. Chop: Mango, tomato, & onion into small pieces. 
  3. Mix: Place in a large bowl and toss with lime juice & olive oil. 
  4. Season: with sea salt & pepper.
  5. Heat: Corn Tortillas
  6. Layer the Ingredients: Load each corn tortilla with a bit of chopped Romaine lettuce & two Afia Falafel. We like to break the Falafel in half.
  7. Finish it off: Top with mango salsa and cilantro. 
  8. Enjoy! Serve immediately for a fresh, flavorful bite of the Mediterranean.
