Ingredients

Sauce:

  • 1 large onion, chopped
  • 1 tablespoon olive oil
  • 1 cup tahini
  • 1/4 cup lemon juice
  • 1 cup orange juice
  • 1/2 tablespoon pomegranate molasses
  • 1/4 tablespoon vinegar (apple cider preferred)
  • 1/2 cup cooked chickpeas
  • salt & pepper

Main Dish:

  • Afia Kibbeh, prepared according to package instructions
  • Cooked rice, for serving

Garnish:

  • Fresh lemon zest
  • Pine nuts or sunflower seeds, toasted
  • Parsley, chopped
  • Pomegranate arils

Method

1. Cook the Kibbeh
Prepare Afia Kibbeh according to the package instructions.

2. Prepare the Sauce Base
In a pan, heat a small amount of oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 10 minutes.

3. Mix the Tahini Sauce
In a small bowl, whisk together the tahini, lemon juice, and orange juice until smooth.

4. Blend and Simmer
Add the tahini mixture to the pan with the sautéed onions. For a smoother texture, use a hand blender to puree the sauce to your desired consistency. Mix in the pomegranate molasses and apple cider vinegar.

5. Add Chickpeas and Season
Stir in the chickpeas (or save them as a garnish) and bring the sauce to a simmer. Cook for about 10 minutes, stirring occasionally. Season with salt and black pepper to taste.

6. Assemble the Dish
Serve the sauce over a bed of warm cooked rice. Place the prepared Afia Kibbeh on top.

7. Garnish and Serve
Sprinkle with toasted nuts or seeds, chopped parsley, and pomegranate arils for a pop of flavor and color.

Chef’s Tips

  • Tahini Consistency: If the sauce is too thick, add water or stock a little at a time until it reaches your desired consistency.
  • Orange Juice Alternative: If you prefer a more bitter flavor, experiment with grapefruit juice and other citrus!
  • Garnish Ideas: Swap pine nuts for slivered almonds, or try sunflower seeds for a nut-free option.
