INGREDIENTS
Afia Garlic & Herb Falafel, prepared according to package directions
Quinoa (prepare your favorite according to package directions)
Kale (remove leaves from stems, wash and tear into bite size pieces)
Olive oil
Juice of 1 lemon
Sea salt & pepper, to taste
Your favorite salad dressing
METHOD
1. For the kale, heat 2-3 tsp. of olive oil on medium heat in a sauté pan. Place kale in the heated oil and toss until leaves begin to turn bright green. Drizzle with lemon juice and season with sea salt and pepper.
2. Place equal parts quinoa and sautéed kale in a bowl and top with Afia Garlic & Herb Falafel. Add a squeeze of lemon and your salad dressing of choice.
