When the weather gets chilly, it's easy to want to cozy up with a warm cup of soup. Give Afia's vegan lentil soup a try - it's nutritious and wonderfully flavorful.
6 cups vegetable broth (or we used a 32 oz carton of vegetable broth with 2 cups of filtered water)
1 cup lentils
3 bay leaves
4 carrots, sliced
3 rubs of celery, sliced
2 large potatoes, cut into small chunks
1/2 onion, chopped
Sea salt & pepper, to taste
Juice of 1/2 lemon
Garnish: Lemon & chopped parsley
Add the carrots, celery, onion, and bay leaf to a large soup pot and sautee until softened or translucent. Add the bay leaf, potatoes, and lentils. Pour in the broth and bring to a boil. Once boiling, allow to simmer until the lentils and potatoes are soft. Serve with lemon juice and Afia’s Traditional, Spicy or Garlic Herb Falafel.
