Afia Kibbeh and Pinto Bean Soup
Chilly days call for cozy meals with Afia! Enjoy this recipe with Afia Kibbeh, or Falafel, and spice it more or less as you please.
INGREDIENTS
1 (16 oz) bag of dried pinto beans, rinsed
1 TBS chicken or vegetable broth
2 slices of chopped bacon (optional)
1 whole carrot
1 jalapeño
1 small onion
1 tomato, cut into large chunks
1 - 2 tsp Fiesta Spices Pinto Bean Seasoning
1 bay leaf
Sea salt & pepper to taste
Optional: 1 bottle of beer
Garnish w/chopped red onion, crispy bacon & cilantro (bacon is optional)
Method:
In a large pot, cover dried beans with 2 inches of water & add everything, but the beer. Bring to a boil and then reduce to a low boil. As liquid absorbs add the beer (optional) and more, if needed. Beans will take around an hour to develop a nice flavor and thick gravy. Serve in a bowl with lots of garnish. Use leftovers for refried beans.
